Natural compound keeps food fresh
TECNALIA is investigating a new system of active protection for processed cheeses , cakes and pastry products through the application of natural antifungal compounds and the study of their effect on these food items.
The project will introduce the compounds using three different methods: including them in the plastic packaging material directly in the polymer matrix or by coating on to the material, or by applying an edible coating on the food. Both, the active packaging and the edible coatings applied on to the product surface allow the controlled migration of some beneficial additives to occur over time. Depending on the material used it is possible to regulate the transfer of gases, such as oxygen, to the product and enable control of the humidity.
The shelf life and quality of these products could be prolonged, leading to higher technological content and more added value, helping to encourage innovation in the food and plastics sectors, according to TECNALIA.
