IREKS AT 121st SCOTTISH BAKERS CONFERENCE
Leading German BAKING INGREDIENTS manufacturer IREKS were recent proud gold sponsors of the 121st Scottish Bakers Conference held at the Westerwood Hotel and Golf Resort in Cumbernauld.
In co-operation with Mono Bakery Equipment, IREKS created a unique live theatre of baking at the conference allowing guests to experience the aroma of freshly baked breads as soon as they entered the hotel.
“The conference was an excellent show case for the Paneotrad system and the
IREKS products to demonstrate the high quality the system produces” said Chris Huish Technical and Sales Manager at Mono, manufacturers of the Paneotrad system.
The system held retarded doughs for 12 to 48 hours, the doughs were then placed into the gentle action Paneotrad cutting machine, removed and loaded directly into the oven.
The Paneotrad eliminates the need for bulk fermentation and creates a long slow retarded fermentation of the doughs to bring out the true flavours. Lee Pugh, IREKS National Sales Manager and Neil Woods, Administration Manager at IREKS, produced all of the doughs and baked the display products. They produced 3000+ bread rolls for the breakfasts, lunch and dinner, allowing delegates to sample freshly baked breads hot from the oven.
Approximately 15 IREKS products were showcased throughout the conference including the popular Spelt & Honey bread, as well as Corn Bread, Brownies, Gluten free muffins, cakes and many others.
At the Saturday conference, Maurice Van Tongeren, IREKS Head of Sales International, gave a presentation on leading innovations in bread, cakes and gluten-free products and how the bakery market is moving and developing.
The IREKS team would also like to thank Kathleen Mcshane for use of her bakery, Bavarian Bakehouse to produce all the display breads and cakes.
