• Award-winning PURITY GUM ULTRA emulsifier delivers exceptional turbidity and stability in both soft and alcoholic beverage formulations. Meeting industry and consumer demand for cost-effective drinks, the ingredient eliminates the need for weighting agents can reduce manufacturing costs by as much as 50 per cent.
• A key ingredient on-stand will be N-DULGE C1, a co-texturiser that replaces dairy fat for desserts, dressings, yoghurt and yoghurt drinks with indulgent, luxurious textures.
• The bakery team will demonstrate how manufacturers can use PURITY GUM 25 ER starch to reduce egg content in cakes without compromising taste, texture or mouthfeel.
• N-DULGE 316 co-texturiser can replace costly oil in mayonnaise while maintaining the texture or mouthfeel of a full-fat product.
